Dericious Homemade Pasta

Not made by me, of course. But graciously shared with me.

I was reminded today that my idea of al dente probably would just be ‘mushy’ to most people, but it wasn’t until this evening I actually realised my impression of the term al dente isn’t necessarily correct.

I believed this term merely referred to a narrow window where the pasta was classed as ‘perfect’, and although it does identify the “ideal consistency for pasta”, the term al dente actually refers to the fact that it has been cooked to be “firm to the bite”. Well that explains it…

I certainly like my vegetables this way, even though this term isn’t strictly correct to be used with vegetables, but pasta? Generally not. Doesn’t mean it still didn’t taste heavenly. Molto al dente means slightly undercooked, so I wonder what name completely overcooked pasta has? (Probably no one would eat that but me!)
